Halloween is the perfect excuse to play with your food and what better way than with gooey, creepy, bite-sized fun like these Eyeball S’mores? These are everything you love about a classic s’mores - the marshmallow, chocolate, and graham cracker, but dressed up for Halloween with a gummy eyeball stuck inside the torched marshmallow. They’re the perfect addition to a Halloween party spread, trick-or-treat night, or even just a fun family movie night featuring your favourite scary flicks.

This is the first post in my Bite Sized Halloween Treats series, where we’ll be creating spooky little snacks that are easy to make, kid-friendly, and just a little bit wicked.

  • Scarily Simple to Make – No fancy equipment or advanced baking skills required. Just a few cupboard staples, a baking tray and a blowtorch (or campfire if you’re feeling traditional!).

  • Perfectly Spooky Presentation – Gooey gummy eyeballs peeking out of marshmallows make these little bites look like something straight from a monster movie and they’re even more effective once the marshmallow has been torched.

  • Crowd-Pleasing Flavours – Graham cracker crunch, melty chocolate, and gooey marshmallow, everyone loves the classic s’more combo, especially when it’s dressed up for Halloween.

  • Customisable Fun – Switch up the chocolate (white, dark, or even brighten it up with some green colouring for Frankenstein Eyeballs). Actually wait I want to do that now!

 

Ingredients:

This is a simple recipe so uses lots of ingredients that you are likely to already have in your cupboards at home, but there may be a couple of specific seasonal extras you need.

Graham Crackers – These act as the base, giving the s’mores their signature crunch and balance to the gooey marshmallow.

Chocolate Squares (milk or dark) – Melty, rich, and indulgent. Chocolate is the “glue” that brings everything together.

Giant Marshmallows – The classic s’more essential! When toasted, they puff up perfectly and seal the gummy eyeball in place.

Gummy Eyeballs – Larger and gooier than candy eyeballs, these create a realistic (and deliciously creepy) look for your Halloween treat. I use these ones.

Blowtorch – For the dramatic toasting effect, and to give the marshmallows that perfect golden-charred finish.

Lolly Sticks (optional) – Turn your s’mores into easy-to-hold pops, perfect for kids’ parties.

FAQ’s

Q: Can I make these without a blowtorch?
A: The blowtorch really gives them their wow factor, but you could also toast the marshmallow over a gas hob flame or BBQ. The key is direct heat for that dramatic look but be careful not to burn yourself or melt the gummy eyeball too much.

Q: Will the gummy eyeball melt when I torch the marshmallow?
A: Not if you tuck it inside the marshmallow slit before toasting. The marshmallow toasts around it while the gummy stays gooey and intact.

Q: Can I prep these ahead of time?
A: You can assemble the graham cracker, chocolate, and marshmallow (with eyeball inside) a few hours ahead. Just torch the marshmallow right before serving for the best texture.

Q: Are gummy eyeballs easy to find?
A: Yes! Most supermarkets and party shops stock them around Halloween, or you can order them online HERE

Q: Can kids help make these?
A: Kids can assemble the s’mores and decorate with chocolate, but please follow correct H&S proceedings and ensure the blowtorch step is handled by an adult.

 

Expert baking tips!

Safety First | Keep little hands back when using the blowtorch; let kids decorate after the marshmallows are toasted.

Perfect Toasting | Hold the blowtorch about 4–6 inches away and move it in circles for even golden browning.

Keep It Creepy | Don’t over-melt the gummy eyeball; a quick torch around the marshmallow will leave it intact but looking wonderfully monstrous.

Party Trick | Serve them on sticks, standing upright in a pumpkin or cauldron, for a grab-and-go Halloween centrepiece.
